Guest lecture was conducted by Operations domain on 28th Feb, 2023. Guest speaker Chef Vijaya Baskaran, Past Vice President and presently General secretary of Indian Federation of Culinary Associations had delivered a lecture on “Service Design in the Hospitality Industry.”
With over four decades of experience working in Taj, Starwood, Ashok and Marriot Hotels, Chef Baskaran briefed about the various departments and its functions, the day routine discussion and its importance in day-to-day operations involved in a structured hotel. He also explained about implementation of various standards in the hospitality industry like- Brand standards and Safe Food & Hygiene Standards. He shared his real-life experience, as a judge, involving the Bocusse d’Or (a World Chef Championship) in which he represented India.
At the end of lecture, he had a very interactive Q&A session with the students answering the students with his insightful answers.
